Tomato and Basil Soup
Discover how to make our warming and delicious Tomato and Basil Italian Soup. This simple passata recipe combines our flavourful Italian tomatoes with vegetables and herbs, for the perfect lunch or evening meal.
Ingredients
1x 690g Jar Napolina Passata
Handful of basil leaves
2 cloves garlic, crushed and finely chopped
1 large red onion, finely chopped
1 stick celery, finely chopped
1 carrot, finely chopped
2 tablespoons Napolina Olive Oil
500ml vegetable stock
Salt and black pepper
Method
Finely chop 1 large red onion, 2 cloves of garlic, 1 carrot and 1 stick of celery
Heat 2 tablespoons of Napolina Olive Oil in a pan
Add the chopped ingredients and lightly fry for 10 minutes until soft
Add a jar of Napolina Passata
Take 500ml vegetable stock and add to the pan with salt and black pepper
Simmer for 20 minutes
Chop a handful of basil leaves and add to the soup, stirring well
Remove from the heat and blend until smooth
Serve with a basil leaf and crusty bread
