Italian Frittata
This Italian Frittata is the perfect solution for a lunch or light main meal. “Frittata” or Omelette recipes are simple and quick to make with our delicious Napolina version ready to go in just 30 minutes including prep time
Ingredients
2 tablespoons Napolina Light in colour Olive Oil
1 large red onion, finely chopped
2 cloves garlic, finely chopped
200g cherry tomatoes, halved
100g ricotta cheese
120g Napolina Green Olives, halved
8 eggs, whisked
Handful basil leaves, finely chopped
Salt and black pepper
Method
Preheat the grill
Chop an onion, 2 cloves of garlic, and a handful of basil leaves. Halve 200g cherry tomatoes and 120g green olives.
Heat 2 tablespoons light in colour olive oil in a pan and add the onion and garlic, lightly frying for 10 minutes until softened. Add the cherry tomatoes and olives and fry for a further 2 minutes. Add the basil leaves and 100g of ricotta cheese dotted in small spoonfuls around the cooked vegetables.
Whisk the eggs and season with salt and pepper before pouring over the vegetables and ricotta. Keep on a medium heat for 3-4 minutes before placing the pan under the grill for a further 5 minutes to finish cooking until golden.
